Spicy Wontons Recipe

Ingredients for Spicy Wontons: Pork hind leg meat 500g, Wonton wrappers as needed, Sesame oil 2 tablespoons, Chili oil 2 tablespoons, Light soy sauce 1 tablespoon, Fragrant vinegar 1 tablespoon, Light soy sauce 1 tablespoon, Fragrant vinegar 2 tablespoons, Seaweed as needed, White pepper as needed, Corn kernels 100 grams, Century egg 1, Green onions 3.
Method for Spicy Wontons: Step 1: Clean the pork hind leg meat, cut it into small pieces (remove any sinew), and freeze it for an hour. Prepare some ice cubes to keep the meat firm when mincing. Step 2: Use a meat grinder on the first setting for 5 seconds, then switch to the second setting for 10 seconds, add ice cubes and continue mincing for another 10 seconds. Repeat this process 5 times, ensuring the meat grinder does not overheat.


Step 3: After the meat is minced, add corn kernels, chopped green onions, or century egg pieces according to taste to create different flavors of wonton fillings. Step 4: Take a wonton wrapper, place an appropriate amount of filling, and fold it into the desired wonton shape. Step 5: Boil plenty of water in a pot over high heat. Once boiling, add the wrapped wontons and cook for about four minutes after they float to the surface, ensuring they are thoroughly cooked.


Step 6: Place seaweed and shrimp skin in a bowl, add light soy sauce, salt, sesame oil, fresh flavor enhancer, and white pepper as needed. Step 7: Pour in the hot broth from the wontons and mix well. Step 8: Remove the cooked wontons and place them in the bowl with the prepared broth. Step 9: Adjust with vinegar and chili oil according to personal taste. Cooking Tips for Spicy Wontons: Adding ice cubes when mincing the meat makes it more elastic. When wrapping wontons, you can apply a little water to the edges of the wrapper to help it stick.
