Ingredients for Chicken Shredded Noodle Salad: 400g noodles, 1 chicken breast, 200g mung bean sprouts, appropriate amount of crushed peanuts, and chopped green onions.
Method:
Step 1: Prepare the ingredients.
Step 2: Place the chicken in a pot, pour in an appropriate amount of water, add a few slices of ginger, 2 tablespoons of salt, 2 tablespoons of cooking wine, 2 star anise, and a few Sichuan peppercorns. Bring to a boil, then simmer for 20 minutes until the chicken is fully cooked.
Step 3: Remove the chicken, let it cool, and place it in a plastic bag. Use a rolling pin to break it up. (Breaking it up with a rolling pin makes it easier to shred the chicken.)
Step 4: Shred the chicken along the grain of the meat, the finer the better.
Step 5: Boil the noodles in a pot of water until they are cooked, then remove and rinse under cold water to cool.
Step 6: Drain the noodles, place them in a large dish, add 2 tablespoons of cooked oil, and mix with chopsticks. (You can also use a fan to blow on them for better results.)
Step 7: Blanch the mung bean sprouts in boiling water for 1-2 minutes, then remove and rinse under cold water for later use.
Step 8: In an empty bowl, put 2 tablespoons of sesame paste, half a teaspoon of salt, half a teaspoon of soy sauce, and 5 tablespoons of water, and mix in one direction until smooth to make the sesame sauce.
Step 9: Crush the garlic and add it to the bowl.
Step 10: Add 3 tablespoons of light soy sauce, 4 tablespoons of rice vinegar, 2 tablespoons of sugar, 1 tablespoon of Sichuan pepper oil, and a pinch of chicken essence to the bowl and mix well to make the sauce.
Step 11: Place the noodles in a bowl, add a small amount of mung bean sprouts and shredded chicken. Then add a little sesame sauce, sauce, chili oil, and sprinkle with a little chopped green onions and crushed peanuts. Your Chicken Shredded Noodle Salad is ready to serve.
