Ingredients for Zhan Shui Mian: 300g all-purpose flour, 180g cold water, oil as needed, 6g salt, 200g small celery, green onions and garlic as needed, five-spice powder as needed, 1 egg.
Method: Step 1: Knead the flour with water into a smooth dough. Let it rest for ten minutes.
Step 2: Divide the dough into 12 smaller portions, and shape each into a cylindrical dough.
Step 3: Coat each dough with vegetable oil, wrap with plastic wrap, and refrigerate.
Step 4: Let the dough rest in the refrigerator for at least one hour. Remove from the fridge.
Step 5: Take one dough, flatten it with your hands, and then roll it into a long strip using a rolling pin.
Step 6: Hold the ends and gently stretch the dough to form an even noodle. Cook the noodles in boiling water.
Step 7: When the noodles are cooked, add celery leaves to the boiling water, then remove and place them in a basin of cold water.
Step 8: Combine the cooked noodles with the blanched celery.
Step 9: Prepare the ingredients for the dipping sauce.
Step 10: Crush the garlic and chop it finely. Pour hot oil over it.
Step 11: Dice the tomatoes and finely chop the green onions and ginger.
Step 12: Heat oil in a pan and sauté the green onions and ginger.
Step 13: Add the diced tomatoes and stir-fry, then season with salt and five-spice powder. Add hot water and simmer.
Step 14: Beat the egg.
Step 15: Scatter the beaten egg into the pan. Add vinegar to the pan.
Step 16: Place crushed garlic and chili oil with fragrant vinegar in the dipping water.
Step 17: When eating, remove the noodles from the large basin and dip them into the dipping sauce, one at a time.
Cooking Tips: 1. Different flours have varying water absorption; adjust the water accordingly. 2. Celery, green vegetables, or other leafy greens can be used.
