Ingredients for Shaanxi Zhen Gao (Lazy Version): 1000 grams of glutinous rice, an appropriate amount of red dates, kidney beans, candied dates, and an appropriate amount of water.
Step 1: Soak the kidney beans in advance, I soaked them for six hours.
Step 2: Soak the glutinous rice in water for the same duration, six hours.
Step 3: Boil the soaked kidney beans for half an hour, until they can be easily crushed by hand.
Step 4: To remove the pits from the red dates, I used scissors to cut them open and remove the pits.
Step 5: In an electric pressure cooker, lay a layer of kidney beans.
Step 6: Then add a layer of glutinous rice.
Step 7: Follow with a layer of candied dates.
Step 8: Add another layer of glutinous rice.
Step 9: Finally, add a layer of red dates. I also used the remaining kidney beans and candied dates on top, but it is not recommended as the top layer of kidney beans does not taste as good as the bottom layer.
Step 10: Add water just enough to cover the red dates.
Step 11: Use the porridge setting on the electric pressure cooker and cook for three cycles. Once the pressure is released automatically, let it sit overnight. I couldn’t resist and opened the lid after the pressure was released, then crushed and smoothed the red dates on the surface with a rice paddle.
Step 12: Scoop out and serve. The flavor of the red dates is rich and it tastes much better than store-bought.
