New Year’s First Dish: Hubei Style Stir-Fry

The first dish of the Spring Festival features ingredients such as spinach, chives, bean sprouts, glass noodles, Sichuan peppercorns, vinegar, garlic, soy sauce, mustard oil. Here are the steps to prepare this dish:
1. Clean the spinach thoroughly.


2. Wash the chives.


3. Soak the glass noodles until they are soft.


4. Prepare the bean sprouts.


5. Blanch the vegetables in boiling water and then squeeze out the excess water.


6. Heat the Sichuan peppercorns in oil over low heat until they become fragrant. Pour the hot oil over the blanched vegetables.


7. Add minced garlic, vinegar, soy sauce, and a dash of mustard oil according to your preference. Adjust the salt to taste, but use it sparingly.
