Ingredients for Nutty Spinach: Fresh spinach 300g, peanuts 50g, garlic 2 cloves, sesame oil 1 teaspoon, salt 1 teaspoon, light soy sauce 1 teaspoon, vinegar 2 tablespoons, white sugar 2g, vegetable oil 3g, table salt 2g, dried red chili peppers 5.
Method:
1. Heat oil and fry the peanuts.
2. Cook until done and drain the oil.
3. Cut dried red chili peppers into small pieces and set aside.
4. Use the oil from frying peanuts to pour over the cut chili peppers to make chili oil.
5. Chop garlic into small pieces.
6. Prepare the sauce by adding vinegar, light soy sauce, salt, garlic, chicken essence, sesame oil, and sugar to the chili oil and mix well. Set aside.
7. Pick and wash the spinach.
8. Cut the spinach into sections.
9. Boil water in a pot and add 1-2 drops of oil and salt.
10. Blanch the spinach in the boiling water.
11. After blanching, remove and rinse under cold water.
12. Squeeze out excess water and set aside on a plate.
13. Place spinach and peanuts in a bowl, pour half of the sauce and mix well.
14. After mixing, transfer to a bowl, press down, invert a plate on top, and flip over.
15. Finally, pour the remaining sauce on top to complete the dish.
