Sichuan Spicy Chicken Cubes Recipe

Ingredients for Sichuan Spicy Chicken Cubes: 3 whole chicken legs, half a spring onion, 5 slices of ginger, 3 tablespoons of cooking wine, 10 grams of salt, 1 gram of monosodium glutamate, 2 grams of Sichuan pepper powder, 1 gram of angelica powder, 2 grams of white sesame seeds, 1 gram of cumin powder, 1 gram of cumin seeds, 5 grams of sugar, 5 grams each of coarse and fine chili powder, 1 tablespoon of aged vinegar, 1.5 tablespoons of Hao Ji Spicy Sichuan Sauce, 1 tablespoon of sesame oil, 2 gardenia fruits, and an appropriate amount of crushed peanuts.


Method for Sichuan Spicy Chicken Cubes:


1. Clean the whole chicken legs and set aside.


2. Chop the chicken legs into walnut-sized pieces.


3. Place the chicken legs in a pot with cold water, add spring onions, ginger, cooking wine, angelica powder, gardenia fruits, meat seasoning packet, salt, and bring to a boil. Then simmer on medium heat for half an hour.


4. After simmering, remove the chicken from the broth, discard the spring onions and ginger, and drain the chicken in a bowl.


5. In a separate bowl, mix coarse and fine chili powder, cumin seeds, cumin powder, white sesame seeds, salt, sugar, and monosodium glutamate.


6. Add sesame oil and mix well.


7. Pour in hot oil.


8. Add soy sauce, dark soy sauce, oyster sauce, and aged vinegar.


9. Stir in Hao Ji Spicy Sichuan Sauce and set aside.


10. Pour the sauce over the chicken.


11. Mix in crushed peanuts, toss well, and serve on a plate, garnished with finely chopped spring onions.

Cooking Tips for Sichuan Spicy Chicken Cubes:


1. I used chicken legs here; if you prefer, you can substitute with Sanhuang chicken.
